Eggplant Parmigiana – Naturally Vegetarian!

♥ Many Italian dishes are built around eggplant, aka melanzana or aubergine, such as Pasta alla Norma, or Involuti.  This southern Italian version of Eggplant Parmigiana is naturally vegetarian and brings together the best of the summer harvest.

♥ Bring Italy into your home and eat like an Italian!

♥ There are several schools of thought when it comes to preparing the eggplant for this dish. My Italian American relatives in Boston do the southern Italian method of slicing, breading, and frying the eggplant in oil before assembling.

♥ As much as I love my family’s traditions, for this class, we will oven-fry the eggplant to cut down on oil and calories. The full flavor of the eggplant still comes through and the dish is still beyond succulent.

♥ For this class, we will prep the eggplant, make our own tomato sauce, and come away with a mouthwatering dish that is filling, loaded with umami, and makes great leftovers. Just in time for supper! Have a glass of red wine handy, and let’s dive into Southern Italy together. The recipe calls for eggplant, tomatoes, parmigiana, mozzarella, olive oil, basil, and salt.
