Tip for using zested lemons.

How many times have you zested or peeled a lemon for a recipe and then wondered what to do with the naked citrus fruit that remains? If you are like me, and you hate to waste anything, especially a sweet, juicy Meyer (or other) lemon, here is a simple solution:

1. Cut in half and squeeze the lemon, collecting the juice.
2. Pour the juice into an empty ice-cube tray.
3. Freeze.

$. Remove citrus juice cubes from the ice-cube tray and put in a zip lock freezer bag or plastic container.

6. Keep in the freezer and thaw individual cubes as needed in other recipes.
