Welcome amici to our “What’s the Veg?” page. What will you find here? An ever-growing collection of plant-based recipes made with vegetables in season.
Here’s how it works: Each week, I will visit my CSA farm, bring home the bounty, create some culinary dishes using said veggies, and then share the recipes with you.
As more and more of us are including plant-based dishes and vegetables in our diets, perhaps you will find some inspiration here. I hope to create dishes that are delicious, and nutritious, and take full advantage of the flavors inherent in each and every vegetable.
So I say, let’s study simple whole foods, spices, herbs, and basic high-quality ingredients to coax the most flavor from our foods, the natural, Italian way.

This week we were gifted with sunchokes, radishes, baby kale, red beets with greens, masa for tortillas, and fresh salsa. Let’s see what we can do with these!
