
In Venice, we call them cicchetti, in Tuscany, we call it bruschetta, but wherever we are in Italy, the early evening snack is an important part of the culture. After the midday pause, starting around 5:00 pm, folks begin to come out and head for the local gathering place to enjoy an assortment of small bites, a glass of wine, and conversation.
The possibilities are endless and can be mix and match! The recipes in this class include techniques and ideas that we can apply to a variety of dishes. For example, we will learn how to deglaze and saute mushrooms, how to make walnut pesto, how to make cherry agrodolce (an Italian sweet/sour sauce), how to pair cheeses, flavors, fruits, and vegetables in antipasti.
On Sunday, July 23, 2023, 12:30 – 2:00 pm, on Zoom, we will make an assortment of Italian small bites perfect for a summer evening: Cherry Tomatoes with Walnut Pesto, Mushroom and Mascarpone, Sweet Cherry Agrodolce Sauce, and Classic Tomato Bruschetta.

Summer Cherry Agrodolce – a sweet/sour sauce made with sweet cherries, vinegar, and sugar. Full of flavor, a perfect topping for bruschetta, cheeses, and even vanilla gelato.

Here’s how it works
Together, over Zoom, we will cook together. Once you register for the class, I will send you the complete recipe and equipment list so you can gather everything before class begins. Then, on the day of class, we will cook together, and I will take you through everything, step by step. By the end of class, you will have a delicious meal ready to enjoy. Invite friends, family, neighbors to join in the fun and to share the Italian dishes.
What you will need
For most of the small bites you will need a loaf or two of Italian or French bread or baguette. We will use sweet cherries (1 lb), cherry tomatoes, basil leaves, garlic, mushrooms, shallots, brie cheese, parmigiana, and mascarpone cheeses. Of course. lots of extra virgin olive oil!
To make the walnut pesto, you will need either a mortar and pestle, a blender, or food processor. I will send the exact recipe with specific quantities upon registration in the class.
