Piadina Romagnola is a classic Italian Flatbread with a very long history dating back to Ancient Rome. The Piadina Romagnola is traditionally made with lard, but we will be making ours with olive oil.
The Piadina is a great way to begin bread baking! It’s simple and fast.
From start to finish, the flatbread takes about an hour. It is a yeasted bread, but only uses baking soda to leaven the dough, so no long waiting is needed. The only ingredients are flour, salt, baking soda, and olive oil.
Once the Piadine is done, it is folded in half and filled with seasonal vegetables, meat such as prosciutto, and cheese such as mozzarella, but there are countless variations!
In class, I will be making a meatless version, filling mine with cheese, pesto, tomato, and greens, but feel free to use whatever is seasonal and your preferred filling. The best part is choosing the filling… imagine an Italian taco!
We will also make a fresh basil pesto!
