Try roasting the squash seeds! They are yummy! : Separate the seeds from the pulp. Add a drizzle of olive oil and a pinch of salt to the bottom of a baking dish. Add the squash seeds and stir to coat the seeds with oil. While the squashes are baking, bake the seeds alongside, for about 10 - 15 minutes until they are browned and begin to make a popping sound. The seeds are delicious and can be served with the baked squash, on a salad, or as a snack.
