Pinzimonio
A classic antipasto that can be served anytime of year. Because of the bountiful harvest, autumn provides us with many wonderful choices. This antipasto is so simple to make, delicious, and very seasonal. The basic recipe includes any raw vegetable that is suitable for dipping and an extra virgin olive oil dip (preferably a Tuscan olive oil).
From the website Taste Atlas: “Pinzimonio is one of the simplest Italian dishes ever created, consisting of fresh seasonal vegetables served with a dip made with olive oil, salt, pepper, vinegar, and lemon juice. The vegetables might include carrots, celery, tomatoes, artichokes, fennel, or any other vegetables that can be eaten raw. All you need for this simple starter is some raw vegetables, a good olive oil and your favorite Italian seasoning, salt and pepper.”

Made with a cherry tomato, rosemary, olive oil sauce layered between polenta and Parmigiano-Reggiano cheese, then baked to perfection.
Cecina – Farinata di Ceci – Chickpea Flatbread
Cecina – Farinata di Ceci – Chickpea Flatbread is a Tuscan classic, with only 3 ingredients: chickpea (garbanzo bean) flour, olive oil, and fresh rosemary. Breads made with chickpea flour are commonly found near Lucca and the Garfagnana mountains. Cecina can be served instead of wheat-based bread with an antipasto or main dish or broken into pieces and added to a vegetable stock. Chickpea flour can be purchased at health food stores or online.
We will make these three dishes together, and you will come away with not only a table full of Tuscan treats, but will learn basic cooking methods to apply to all your Italian cooking; for example, making polenta, deglazing, creating a stove-top simple tomato sauce, and most of all, you will eat like an Italian!
